Calzones first thing in the morning? Today folks, we’re giving you the best of both worlds.

I like to play a conservative game when it comes to my breakfasts. When we’re out for brunch, I’ll always opt for a classic egg-and-sausage plate. Lately though, I’ve been feeling a bit more adventurous.

My breakfast calzones are perfect for those that are on-the-go. When I made my first batch, I stuffed a couple in a sandwich bag and gave them to my husband. It was nice to send him off with something delicious to munch on while he was on the road.

Breakfast Calzones

5 eggs
2 Tablespoons milk
2 cups all-purpose flour
1 Tbsp sugar
1 Tbsp baking powder
1 tsp salt
½ cup butter, cold, cut into Tablespoons
¾ cup buttermilk, cold
1/2 cup cheese
5-6 sausages, cooked and chopped into tiny pieces

Preheat oven to 325F
In a medium-sized frying pan, melt a tablespoon of butter over medium heat.
In a bowl, beat together eggs and milk and add to frying pan.
Stir constantly until the eggs are fluffy and fully cooked, remove from heat.
In a large bowl, mix flour, sugar, baking powder & salt. Add remaining butter and cut using a pastry blender. Add cold buttermilk mix until dough forms a ball.
Roll dough onto a lightly floured surface and cut into 4-5 inch circles.
Take 1-2 tablespoons of the scrambled egg mixture, a sprinkle of cheese and a bit of sausage and place in the centre of the dough circle.
Bring the edges of the dough together to form a half circle, pinch the ends closed. Place on a baking sheet and repeat until you’ve used up all of the scrambled eggs, sausage and cheese.
Bake for 8-12 minutes, until golden brown.

  2. Who wouldn’t want a calzone for breakfast! This looks delightful and it would be awesome to make this for the family. I love that it’s filling as well. Perfect for keeping your energized throughout the morning.

  3. Mornings aren’t normally my friend. But having something yummy to look forward to helps me get out of bed. The kids all love scrambled eggs, so I know this recipe will be a hit with all of us.
