Today, my nieces are back to school from summer vacation. I decided to whip up a fun (and easy!) after-school snack for them to enjoy… because I’m not like those regular aunts; I’m a cool aunt. (Okay, and maybe a little dorky, too.)
I’m all about serving my nieces healthy snacks but keeping them delicious, too. I know how hectic it can be in the afternoon: dinner’s on the stove, you’ve doubled as a mega-house-cleaner and homework tutor, all the while trying to think of ways to give yourself a ten minute break.
I thought about a snack that can help you save on time. My Apple Medallions are not only very tasty, but they’re healthy and easy to prepare. I absolutely adore their simplicity and how every topping is a question of taste and preference. That being said, what I’ve listed on the ingredients list is totally customizable: you can top them with whatever you like!
Healthy Apple Medallions
2 apples
4 to 6 tbsps almond butter
6 tbsps dried fruit (any to your liking!)
5 tbsps shredded coconut
Yields: About 10 apple slices
Process:
- Make things more simple by preparing your ingredients so that your apple slices are ready for garnishing. We put our dried fruit and shredded coconut in separate bowls.
- Wash and core your apple. Cut it into round slices.
- Each apple slice will require about ½ a tablespoon of almond butter. Slather it on and then top with the dried fruit of your choice. Sprinkle on the shredded coconut.
- Enjoy!

Great snack idea! I used to love apples with peanut butter as a kid but now I think it’s even better with almond butter! Adding coconut and dried fruit is a great idea too.
