Today, I’m putting a well-deserved spotlight on my mother-in-law’s cooking.
I grew up eating empanadas – Filipino food is a healthy mix of Spanish-influenced dishes but still somehow boasts strong, oriental flavor profiles. I’m a pretty lucky gal because my mom is highly-skilled in the kitchen, so we didn’t have to turn to Filipino restaurants to score the real deal. I devoured genuine pinoy dishes from the comfort of my own home.
When I was first met Joe, I was excited to try his mom’s cooking. Joe being half Bolivian (his other half is Swiss), he was exposed to many of the same dishes that I was since both of our family’s countries were heavily influenced by Spain. Of course, his mother has her own take on empanadas, and they’re something I can hardly resist.
Yes, folks – I get the best of both worlds (especially food-wise). Booya.

They looks so delicious! I’m not really sure what empanadas are (I’ll have to google them) but they look kinda like curry puffs & now I’m craving some similar.
