Pancake perfection for this year’s Mother’s Day celebrations. Because who can pass up a good brunch?
I recently came to two realizations: this is my first Mother’s Day celebration as an actual mommy (yay!) and, I really love pancakes.
Okay, well, the pancake love isn’t one of my latest “a-ha” moments. But it’s been a while since I’ve actually devoured a stack of flapjacks for breakfast.
Mother’s Day brunch is a great way to celebrate the women in our lives. Mommies, grandmothers, aunts, sisters – these are some of the women that shape our every day, so it’s natural to want to raise a toast with them over a table of crepes, yogurt, granola, frittatas, and other classic brunch-like dishes.
Today, I decided to share my favorite pancake recipe. It took a couple of years to really find a batter that achieved THE perfect pancake: fluffy, golden, and slightly sweet in taste.
Pancake Perfection Batter
1 cup flour
2 tbsp sugar
1.5 tbsp baking powder
Pinch salt
1 egg
1 cup milk
2 tbsp oil
Sift flour in a large mixing bowl then add sugar, baking powder, and salt.
In a small bowl, whisk egg and milk. Add egg and milk mixture to the dry ingredients and combine.
Once all ingredients are well-mixed, add oil and mix.
In the center of a non-stick pan, drop a ladle’s worth of batter and cook for 3-4 minutes on each side.
The key to my heart is definitely fluffy pancakes. I told my husband all I wanted was to sleep in a bit and have a delish breakfast. Totally my perfect idea of a Mother’s day well spent. I am printing this recipe out for us to try.
I have been telling the kids how badly I want breakfast in bed – fingers crossed that they were listening. These pancakes look perfect! I always just make the prepared mix but making them from scratch is best!

I love cooking and baking, but I’m actually TERRIBLE at making pancakes. To the point that I’m willing to pay for them at IHOP. I’ll have to try out this recipe and see if it works out!

Congratulations! Enjoy every moment of it. I remember Mother’s Day when I was pregnant – my sister-in-law gave me a gift, which was totally unexpected on my end. I wasn’t expecting a gift until actually giving birth!
