Pancake perfection for this year’s Mother’s Day celebrations. Because who can pass up a good brunch?
I recently came to two realizations: this is my first Mother’s Day celebration as an actual mommy (yay!) and, I really love pancakes.
Okay, well, the pancake love isn’t one of my latest “a-ha” moments. But it’s been a while since I’ve actually devoured a stack of flapjacks for breakfast.
Mother’s Day brunch is a great way to celebrate the women in our lives. Mommies, grandmothers, aunts, sisters – these are some of the women that shape our every day, so it’s natural to want to raise a toast with them over a table of crepes, yogurt, granola, frittatas, and other classic brunch-like dishes.
Today, I decided to share my favorite pancake recipe. It took a couple of years to really find a batter that achieved THE perfect pancake: fluffy, golden, and slightly sweet in taste.
Pancake Perfection Batter
1 cup flour
2 tbsp sugar
1.5 tbsp baking powder
1 cup milk
2 tbsp oil
Sift flour in a large mixing bowl then add sugar, baking powder, and salt.
In a small bowl, whisk egg and milk. Add egg and milk mixture to the dry ingredients and combine.
Once all ingredients are well-mixed, add oil and mix.
In the center of a non-stick pan, drop a ladle’s worth of batter and cook for 3-4 minutes on each side.

The key to my heart is definitely fluffy pancakes. I told my husband all I wanted was to sleep in a bit and have a delish breakfast. Totally my perfect idea of a Mother’s day well spent. I am printing this recipe out for us to try.
I have been telling the kids how badly I want breakfast in bed – fingers crossed that they were listening. These pancakes look perfect! I always just make the prepared mix but making them from scratch is best!
Pancakes are totally one of my favorite foods. These are seriously perfect pancakes too. Totally perfect for Mothers Day!
Ahhh first Mothers day as a new mom?! That has to be really really exciting- and pancakes are always a good idea. Happy Mothers day to you boo 🙂
Thank you, Cara! I’m very excited for this Sunday!
I love cooking and baking, but I’m actually TERRIBLE at making pancakes. To the point that I’m willing to pay for them at IHOP. I’ll have to try out this recipe and see if it works out!
Pancakes are always a great idea! And congratulations! This Mother’s Day is also special for me, I’m going to be a mom really soon, can’t wait!
Congratulations! Enjoy every moment of it. I remember Mother’s Day when I was pregnant – my sister-in-law gave me a gift, which was totally unexpected on my end. I wasn’t expecting a gift until actually giving birth!
My kids know I love me some fluffy pancakes, we are having a bunch this Mother’s Day and I sure hope pancakes are on the menu. Happy Mother’s Day also!
Congratulations on celebrating your first Mother’s Day as a mom! I hope you enjoy every second of it! Those pancakes look so yummy! Light and fluffy, just the way I like them. I could eat pancakes every day! I am a huge fan of breakfast food for pretty much every meal!
Congratulations on your first Mother’s Day! We’re huge pancake lovers at our house too. In fact, they’re my husband’s specialty. Every Sunday morning he makes them and we have breakfast in bed (extra syrup is a must) x
Happy First Mothers Day! I think a Mothers Day home brunch is an awesome idea. Great pancake recipe too!
I’m all about that fluffy pancake life. And those look amazing. I might leave this tab open so my husband can see it and take the hint that I want breakfast in bed for Mother’s Day.
