Hola! We are back in action and we’re starting off with an easy (and lucky!) St. Patrick’s Day treat.

Okay, wait… what?!

You mean it’s St. Patrick’s Day this weekend? Oh, dear.

Have you ever found yourself stuck in a rut… a holiday has come closer than expected and you want to join in on the festivities?

One of our favourite last-minute treats is chocolate bark. It’s easy to get creative with toppings, colors, and the types of chocolate you decide to toss into the mix.

Here’s our very lucky rendition of it:

Lucky Chocolate Bark for St. Patrick’s Day

1 bag semi-sweet chocolate chips
2 cups green candy melts
2 tbsp coconut oil
1 cup marshmallow cereal (we chose Lucky Charms)
Green sprinkles
Gold sprinkles

Line a baking sheet with parchment paper and set aside.

Using the double-boiler method, melt chocolate chips and pour onto lined baking sheet. Spread across your lined baking sheet evenly.

In 30-second intervals, microwave green candy melts and coconut oil until completed melted. Pour over and evenly across your melted chocolate. Use a fork and swirl the chocolate gently to create a marbled look.

Top off with marshmallow cereal and sprinkles and let cool in the refrigerator for about an hour (or until completely set).

Break off in pieces and enjoy!

What do you like to include in your chocolate bark? Do you have any special plans for St. Patrick’s Day?
